Uoman procures ingredients through its own unique route, from Abashiri Fishing Port in Hokkaido in the north to Amakusa Fishing Port in Kumamoto Prefecture in the south. Our ingredients staff and head chef personally visit local fishing ports and markets to assess and purchase the finest fish, and then ship them directly to us.

We purchase seasonal ingredients so that you can enjoy the seasonal feel unique to Japan and the original deliciousness of the ingredients. A chef who knows the ingredients carefully looks at the expressions of the fish, meat, and seasonal vegetables purchased that day and transforms them into dishes that bring out the best of the ingredients.

Our sea bream rice is cooked in a Shigaraki pot using the traditional method of slowly transmitting heat to the core of the rice to bring out the natural flavor of the rice. This is a delicious dish made with generous amounts of sea bream head and cooked in a secret sauce.

[Domestic beef sirloin Imashiro-yaki]
"Imajo ware" is a traditional craft from Takatsuki City, Osaka Prefecture.
Imajyo-yaki is made from clay that contains a lot of iron, and when heated to extremely high temperatures, it makes a delicious "sizzling" sound and steam, just like an iron plate.
It is an immersive dish that you can enjoy not only with your tongue, but also with your eyes and ears.
